From Lagos Cook-A-Thon To Global Icon: Hilda Baci Redefines Global Culinary Fame

When Guinness World Records officially named Nigerian chef and entrepreneur Hilda Baci a 2026 ICON, it marked a defining shift in her career trajectory. It was no longer just about breaking records. It was about influence, cultural reach, and sustained global relevance.

For the chef who once cooked through exhaustion before thousands in Lagos, the recognition confirms a transformation that has been years in the making.

Hilda Baci has moved beyond the label of record holder into something broader, a cultural figure whose story now sits at the intersection of food, entertainment, and global African identity.

Her breakout came during the Guinness World Record cook-a-thon, which ran from Thursday, May 11, 2023 to Monday, May 15, 2023 at Amore Gardens in Lekki, Lagos.

There, she cooked continuously for 93 hours and 11 minutes in a marathon that drew massive national attention and international acclaim. What began as a personal ambition quickly escalated into a cultural moment, pulling in celebrities, public figures, and global media, and redefining how culinary endurance could become a form of entertainment spectacle.

Two years later, she pushed the boundaries of large-scale culinary performance again on Friday, September 12, 2025 in Victoria Island, Lagos, where she led the preparation of what was confirmed as the world’s largest serving of jollof rice.

The feat, achieved in partnership with Gino Nigeria, weighed approximately 8,780 kilograms and was later validated by Guinness World Records as the largest quantity of jollof rice ever cooked at once. The event reportedly produced thousands of servings distributed after verification, turning a record attempt into a public food experience.

Together, these two landmark achievements cement her status not only as a record-breaker but as one of Nigeria’s most visible culinary exports on the global stage, with influence extending far beyond traditional food spaces into culture, media, and brand storytelling.

Beyond records, Baci has steadily built a structured culinary brand and ecosystem around her name. Through her platform, My Food by Hilda, she has expanded into food experiences, culinary education, and brand-led events. Her cooking classes have become a key part of this evolution, designed not only to teach technique but to mentor emerging chefs and food entrepreneurs.

Participants in her programs have often received more than instruction, with selected trainees gaining mentorship opportunities, exposure to industry networks, and in some cases, rewards and gifts tied to performance and excellence.

This approach has helped position her not only as a performer of large-scale culinary spectacles but also as a builder of talent and community within Nigeria’s growing food industry.

The Guinness World Records ICON designation reflects this broader impact. It is reserved for individuals whose influence extends beyond a single achievement into sustained cultural relevance.

In Baci’s case, it recognises a career defined by endurance, visibility, and repeated global attention, as well as her status as a multi-record holder whose influence continues to grow beyond isolated milestones.

Public reaction to her ICON recognition has been overwhelmingly positive. Across social platforms, fans described her as a symbol of consistency and discipline, while many framed her journey as a source of national pride.

Within Nigeria’s entertainment and culinary communities, chefs and industry figures praised her ability to transform viral success into a structured global brand, helping elevate African cuisine in international spaces.

In her response, Baci expressed gratitude to her supporters and collaborators, consistently emphasising that her journey has been driven by purpose rather than records alone.

She has often highlighted preparation, systems, and discipline as the foundation of her success, positioning her career as long-term cultural work rather than momentary fame. She also reaffirmed her ambition to expand her culinary footprint globally, with a focus on showcasing African food culture on larger international platforms.

Like many high-profile figures, her rise has attracted occasional public debate, particularly around the scale and logistics of her large culinary activations. However, these discussions have not diminished her momentum or global recognition, which continues to expand.

With ICON status now added to her achievements, attention has shifted to what lies ahead. Industry watchers expect further international collaborations, expanded culinary projects, and possibly new large-scale food records that continue to push creative boundaries.

From a Lagos cook-a-thon arena to a globally recognised ICON, Hilda Baci’s journey reflects a new phase in African creative storytelling, one defined not just by breaking records, but by building a lasting cultural legacy that continues to evolve.
